Paired with Poached Blue Point Oyster accompanied by butterscotch and lavender.
Third Course: Walnut Block Pinot Noir (New Zealand)
Paired with Kuroboto Pork Tenderloin accompanied by apple curry, quinoa, garbanzo beans, apple gastrique, and apple curry leather.
Fourth Course: Shinas Estate "The Gully" Shiraz (Australia)
Paired with Venison accompanied by roasted fingerling potato, saffron aoili, cherry jus, and dried cherries.
Fifth Course: Small Gully "The Formula" Proprietary Red Blend (Australia)
Paired with New Zealand Lamb accompanied by blue foot mushrooms, carrot, celery root, and Blis maple syrup.
